Characteristics:
The grapes were harvested in their best moment of maturation, with the necessary acidity to obtain the perfect balance among alcoholic degree, glycerine and total wine acidity. They were subject to a low pressure taking all the flavour of the juice. The fermentation was carried out in September, with a constant temperature of 15°C. making the coupage and bottling during the winter. The second fermentation, in the bottle, took part for a month and a half in our cellars, with a constant temperature of 16°C. Later, the bottles rested in horizontal position for at least two years. |

QUIBIA 2007 - Anima Negra |

Grape Varieties : 85% Premsal and 15% Muscat
Production : Grapes are harvested by hand into small 10kg boxes. Manual selection takes place before grapes are chilled on a bed of dry ice in a chamber to prevent oxidation. Cold maceration at 12° in an anaerobic atmosphere over a period of 10 hours. After pressing, clearing takes place in special tanks before fermentation at 17°.
Fermented and aged on lees for three months in 7,000 litre stainless-steel tanks.

Winemaking
The fermentation of this must begins in new barrels of French and American oak. The fermentation controls are carried out daily. The lees are periodically stirred, which gives the wine its oiliness in the mouth. The wine remains in the new cask with its lees for 5 months.
Characteristics
Lemon yellow colour with a greenish backdrop. On the nose it has aromas of the Verdejo variety with roast new wood, honey, almonds, anis characteristics of the Verdejo variety, elegant with personality. It has reminiscences of tropical fruits. In the mouth it is especially oily; it has structure, body and has a big finish, reminiscent of the grape with which it is made.

Medium intense golden yellow with occasional green hues. On the nose it is big, with intense aromas of its Verdejo variety, hay and ripened tropical fruit. In the mouth, it is fresh, fruity, oily, big, consistent, round and balanced. It is easy to drink.
Gastronomical recommendations
Especially recommended for aperitifs, fish and seafood.
Serve cold. Between 7° and 9°.

Harvested in the second week of September in our vineyards in the Valverde estate. Fermentation controlled at a low temperature. The wine is filtered and cold stabilised.
Characteristics
Brilliant pale straw yellow colour. Very intense on the nose with pleasant aromas of tropical fruits, mango, pineapple, guava, passion fruit. In the mouth it is big, smooth, persistent, a very balanced wine with big retronasal aromas.

Especially recommended for aperitifs, fish and seafood.

Winemaking
The fermentation of this must begins in new French and American oak casks. The fermentation takes approximately 21 days. After this period, we refill the casks. To reduce the wine's acidity, malolactic fermentation is carried out in the cask. After this second fermentation, its lees are continuously stirred until after 5 months the casks are emptied and the wine is prepared for bottling.
Characteristics
It has a golden yellow colour with glints of gold. The secondary aromas typical of fermentation in the cask stand out, roasts, butter, honey, quince and light touches of the variety of which it is made in the background. In the mouth, it is fresh, dense and perfectly combined with the wood. A big finish gives this wine personality.

Sheltered by the Montserrat mountains the Chardonnay variety vines of our Alba Vineyard are the source of this clear, cool and sophisticated wine. It is a full-bodied wine with a bouquet that evokes exotic fruits and lingers on the palate which heightens the qualities of this excellent wine truly 100% Chardonnay. The fermentation is carried out like the elaboration of the white wine, at 15°C. for a period of 20 days. Afterwards, when the bottle is resting, its peculiar and different characteristics are heightened. |

75% petit grain Moscatel and 25% viura.Following a temperature controlled maceration, the slow fermentation process begins and eventually ends at a low temperature. The process leaves behind natural residual sugars which give the wine a personality distinguishing it from other sweet wines.
It is a white wine with bright golden tones, an intense Moscatel bouquet with fruity and flowery overtones and an agreeable smooth taste which caresses the palate. It has a lasting flavour and the aftertaste provides a subtle reminder of the Moscatel sweetness, as well as the Viura freshness, making it a well-balanced wine. |
